48.3% culinary experts foresee the rise of handmade artisanal ice cream in India, reveals Godrej Food Trends report 2022

Mumbai—Artisanal ice cream is now at the centre of the spotlight as ice cream and frozen dessert are undergoing a shift in popularity due to a growing desire for real food with real ingredients. These findings are highlighted in the Godrej Foods Trends Report 2022 – Collector’s edition predicts trends that will dominate the food industry in the coming year based on the contributions of 200+ chefs and culinary experts. Celebrity chefs, home chefs, professional chefs, food bloggers, health professionals, media professionals, mixologists, nutritionists, restaurateurs, sommeliers, food producers, and more, all of whom shared deep insights about their respective areas of expertise.

Close to half (48.3%) experts foresee that artisanal ice cream will be ‘cool’ in 2022 and preferred choice for people. A growing desire for real food with real ingredients has created a shift in the segment of ice cream, bringing artisanal ice cream into the limelight. Innovation and small-batch production mean endless possibilities, with organic milk, indigenous ingredients, and diet specific offerings like high protein, probiotic-rich, diabetic-friendly and more.

Some of the other key findings pertaining to ice creams and desserts are:

  • Healthier desserts – 61.7% of the panel predict desserts with healthier claims will prevailin-home and on dining out menus
  • Artisanal Food – 67.7% of our panel picked locally made artisanal foods as one of the top priorities on restaurant menus while 55.6% predict a growing number of home consumers will choose the same at home
  • Special diet-based desserts – 31.1% panel predicts special diet-based desserts like vegan ice cream will be preferred by consumers.
  • Bite sized desserts – 57.4% experts predict bite-sized, portion-controlled desserts will be popular among consumers.
  • Native Ingredients – 29.2% foresee increased attention by consumers to local, seasonal and native ingredients
  • Lifestyle driven food ingredients – 58.6% of our panel also seeing lifestyle-driven alternatives such as vegan, plant-based and more becoming important to consumers.
